Copycat Crumbl PB&J Cookies

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the creamy peanut butter, granulated sugar, egg, and vanilla extract. Mix until the dough is well combined. In a separate bowl, whisk together the all-purpose flour, baking soda, and a pinch of salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until a soft dough forms. Scoop out cookie dough portions and roll them into balls, then flatten them slightly with a fork to create a crisscross pattern on top. Make an indentation in the center of each cookie and fill it with a small dollop of blueberry jam. Place the cookies on the prepared baking sheet, leaving some space between them. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, enjoy these homemade PB&J Crumbl cookies with a glass of milk for the perfect nostalgic treat!
